Banoffee pie is and English Dessert pie consisting of toffee, bananas and cream on a buttery Biscuits base. It is believed that it was created by Nigel Mackenzie at the Hungry Monk Restaurant in East Susses. This delicous Desserts is mouth watering, a deseert sure to put smile on everyones face.
125g melted butter
250g Crushed Digistive Biscuits
75g soft dark brown sugar
397g of carnation condensed milk
284 ml whipping double cream
Shavings chocolate or cocoa Powder to dust
you would also need
20cm loose-bottomed tart tin
Crumble the biscuits into blender until fine crumbs.
Add the 125g melted butter and combine well.
Add the mixture evenly on to the 20cm fluted, loose bottomed tart tin.
Press the mixture in firmly with a teaspoon and then refrigerate for at least two hours of over night.
Place 75g butter and sugar into a non stick saucepan over low heat, stirring all the time until the sugar has dissolved.
Add the condensed milk and bring to a rapid boil for two to three minutes, stirring all the time for a tick golden caramel.
Spread the caramel over the base, cool and then chill for an hour.
whip the double cream to soft peaks
slice bananas and place on top of the caramel, top with the soft whipped cream.
Finish off with grated chocolate to decorate the pie. carefully remove the pie from the tin and place on a serving plate. chill untill ready to serve.
