Pani Puri

Pani Puri is a popular street food originated from India. There are variations to this recipe depend on the region. The most popular pani puri is the Mumbai version. Made up of round puri which is stuffed with aloo masala and then filled with spiced and tangy water.

With care to assemble. A small hole is made at the top of the puri which will help to stuff the aloo masala accompanied with fine chopped onions and sev. It is then dipped with tamarind and mint water and served immediately before becoming soggy.


Ingredients masala stuffing

2 pealed large boiled potato

¼ cup cooked chickpeas

½ tsp chilli powder

½ tsp cumin powder

¾ tsp chaat masala

½ tsp of mango powder

Salt to taste



In a large bowl mash, the boiled potatoes

Add the chickpeas

Add the powdered ingredients

Mix well and mash completely and set a said

Green chutney tang water

1 cup of coriander fresh leaves

½ cup of fresh mint

2 green chillies

1 garlic clove

1-inch ginger

¼ cup of tamarind juice

2 cups of water

1 tbsp of lemon juice for tangier flavour

1 tsp cumin

¾ tsp chaat masala

Salt to taste


Blend the above ingredient to form a thick smooth paste add one cup of the water and blend thoroughly.

Filter the mixture in a sieve.

Add the remaining cup of water to extract the juice from the mixture

Adjust the salt to taste

The tangy water is ready.


To assemble

Make a hole at the centre of the puri with your thumb

Stuff a tsp of the masala

Followed by the chopped onion and sev

Add one tsp of the green tangy water and enjoy

You can serve pani puri along with more chopped onions and sev as garnish.
