KINGHAT STICKY RICE

Glutinous rice also known as sticky rice, sweet rice or waxy rice, is a type of rice mainly grown in Southeast and East Asia. When cooked its sticky or in the sense of being glue-like texture. Getting the right type of rice is a must. They could be labelled as long grain sticky rice, sweet rice, or glutinous rice. They could be found in the ethnic foods section or nearby Asian grocer or on line. It is important to buy the right kind of rice, but also know how to cook it correctly.There are three basic ways you can use, on the stove, steamed or in a rice cooker.

Make sure you rinse the rice with clean water until it’s clear clean

On the stove

 

Measure two cups of rice and three and a half cups of water into a reasonable sized pot. Let the rice soak for at least half an hour or up to four hours. Add ½ teaspoon of salt and stir. Place the pot over high heat and bring to boil. Turn the heat to medium low and cover the pot leaving the lid slightly off on one side to vent. Cook for 10 minutes and DO NOT stir the rice while cooking. Check to see if the rice has absorbed all the water by using a fork to pull the rice away from the centre. Continue to cook for another 5 minutes if there is still water or until the liquid has absorbed. Remove the pot from the heat and place the lid on securely. Allow the rice to stand for ten minutes before serving.

 

Steamed

 

Steaming the rice is the old school way to make it sticky. Put three cups of rice in a very reasonable sized pot. Cover it with three inches of water and let it soak for at least six to 24 hours. The longer the better. Drain the rice and pour it into a steamer basket. Boil two to three inches of water in a wok or large pot and set the steamer over it. Make sure the rice does not touch the water. Cover and steam for 20 minutes. Stir the rice so that the top layer is at the bottom of the steamer and vice versa. Steam another five minutes if needed.

 

Rice cooker

 

This is the easiest way to cook sticky rice. Measure two cups of rice and two and half cups of water into the rice cooker or deep container . Allow the rice to soak for 30 minutes to four hours even longer for good better taste.

Drain the water from the rice and place it into the rice cooker. Add ½ teaspoon of salt and turn on the rice cooker. 

Add fresh water to cover the rice with 2 inches. 

Cook the rice for 15 to 20 minutes. Or if the rice cooker has an automatic timer, let it go until it shuts off. Let it stand for 10 min and its ready to go.
