Chicken club sandwich is one of the easiest recipe and less time consuming to prepare. It could be prepared well in advance and refrigerated, eaten hot or cold. Good for quick meal, picnic, birthday parties
Ingredients
1 whole chicken skinless
Lettuce
4 Tomatoes
6 eggs
Sliced Pickled Jalapeno
1 tablespoon of Wholegrain mustard
American mustard
Slice bread
4 gloves of Garlic
Half a medium jar Mayonnaise
Salt and black pepper
Crisps or ships
Preparation
Cut the chicken into 8 pieces skinless and put to a boil until tender
Shred the chicken into small pieces and put aside
Whisker 6 eggs with little of salt and black pepper
Prepare two omelettes and cut each into 4 pieces and set aside
In a bowl add the mayonnaise, garlic, wholegrain mustard with a little of salt
Mix until well combined cover and place in the fridge for later
Slice the tomato into thin round slices cover and place in the fridge
Cut the lettuce into chunky slices cover and place in the fridge
Place the Sliced Pickled Jalapeno in a bowl and place in the fridge
All could be prepared a day before and kept in the fridge.
Method
Start toasting the slice bread, you will need 3 slices of toast to do one sandwich. You can also toast the bread and lay everything on the table and every one make their own sandwich.
Lay 3 slices of toast on a clean surface
Spread the mayonnaise mixture on to 2 toasts as shown on the picture bellow
Add the lettuce and 2 slices of tomatoes to the one toast on the right
Then add a slice of omelette as shown below onto the lettuce and tomato toast
Place the shredded chicken on to the other toast, couple of jalapeno and the American mustard
Then lay them on top of each other as shown in the picture below
Cut the sandwich into 2 pieces and serve with Crisps or ships
Note the left over sandwiches can be covered with cling film and kept in the fridge ready for work or school next day. It taste even better eaten cold and can be kept in the fridge for 2 to 3 days.
